Punched Potatoes
What to discover why people all across Argentina are punching their potatoes? The answer is simple… it makes them more delicious! Learn how to create these tasty morsels at home. So, Punched Potatoes! Before these little morsels came into my life, I don’t think I’d ever considered punching food as a legit technique – I’m not sure that Le Cordon Bleu has it in their curriculum, but it’s pretty real in South America, so I’ve been told. And it’s easy to see why. They’re utterly delicious!
Instructions
- Paying attention to these potatoes is key. So often, potatoes are just treated as an accidental accompaniment – we need to show some love to get the best from them. This is my top tip!
- Heat oven to 180ºC/350ºF
- With a sharp paring knife deeply pierce each potato. Place all the potatoes on a baking sheet and drizzle over some olive oil. Toss the potatoes around to cover evenly.
- Bake in the oven for 40 minutes before turning the potatoes. then, using a paper towel to protect your hands from the heat, firmly press down on each potato with the palm of your hand to flatten them slightly.
- Drizzle over 1 Tablespoon of extra virgin olive oil over each potato and season generously with salt & pepper.
- Return to the oven for a further 20 minutes.
- Remove from oven and serve.
- Serve alongside a delicious steak, some BBQ chicken, or a grilled fish. But let’s get real – they’re potatoes – they go with everything!

This International Recipes Burmese Chicken Curry has an abundance of color, fragrance, and flavor. My first taste of Chinese Snow Pea Shoots with Garlic was in Sydney, Australia some 10 years ago. We frequented a rather fantastic Shanghainese restaurant almost weekly and would always order the snow pea shoots. I love the delicate pea flavour from the leaves and combined with the garlic, it’s quite the taste sensation!

Jordanian
Hospitality plays a huge part in Jordanian cuisine, shared plates that feature stews, salads, sweets and more are the cornerstone this Middle Eastern treasure.
Korean
Korean food is a revelation of flavour, colour and fragrance. Jam-packed with flavour and an inventive and surprising cuisine, Korean offers some of the tastiest dishes on my menu. Hot, hearty and packed with umami goodness, Koreans love to eat and I can’t argue with that!
Lebanese
Lebanon cuisine features some of my personal favorites in the World. A combination of fresh, healthy, and flavourful recipes. Plant-forward recipes, juicy meats and fish, and delicious sweet treats- Lebanese cuisine has it all in abundance, and Lebanon likes to feed you! Expect good food, and a lot of it.
Malaysian
Officially my favourite cuisine in the World! I love everything Malaysia and Singapore have to offer. Unique, intensely flavoured curries, tangy and sweet stirfries, and fresh, light soups and salads- Malaysian food has everything I need and then some.
Mexican
One of the Great World cuisines, the International Recipes of Mexico are rich in history and tradition. Always flavour forward with an exciting mix of texture, colour and fragrance. From the humble taco to the mystifyingly complex mole, there’s plenty to set your taste buds alight.
Moroccan
North African International Recipes follow a Mediterranean approach with light mezze style recipes of fruits, nuts, meats and salads. Healthy, hearty and alluringly delicious. Moroccan recipes have a familiarity while delivering a unique mysterious twist of the exotic.
Pakistani
Like Indian food, Pakistani recipes deliver BIG on colour, fragrance and flavour. Rich and buttery meat curries sit alongside a mind bending array of breads, rice and vegetable dishes. The south of India paves a path for what to expect as we travel further south into the Island of Sri Lanka. Always vibrant, and never boring, Sri Lankan food is one of life’s great gifts!

Like it’s Neighbour China, Taiwan offers a wide-ranging cuisine with ancient International Recipes, steeped in tradition. Stir fries, soups, stews and salads are in abundance, with street food like no other place on Earth. Taiwan offers a world of color and flavour in its recipes.
